Cow Conditioner Sirloin Steak with Creamed Spinach & Baked Potato

INGREDIENTS:
3 TBSP Milford Spice Company’s Cow Conditioner
2 top sirloin steaks
1 TBSP vegetable oil
For the Creamed Spinach:
3 (10 oz) pkgs frozen chopped spinach
2 TBSP butter
1 medium yellow onion, diced
6 large cloves garlic, minced
4 oz cream cheese
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
salt and pepper, to taste
For the Baked Potato:
1 to 4 medium Russet potatoes
1 TBSP melted butter or extra-virgin olive oil
Flaky sea salt or kosher salt, for sprinkling
Desired toppings, such as sour cream, butter, chives, salt and pepper
DIRECTIONS:
For the Baked Potatoes:
Preheat the oven to 450 degrees.
Scrub your potatoes clean with a vegetable brush under running water. Prick with a fork, about ¼-inch deep, six to eight times per potato.
Place your potatoes on wire rack in baking sheet, or place them directly on the middle oven rack. Bake for 45 minutes to 1 hour (longer if necessary), until a fork slides easily into the center of the largest potato.
Remove and brush each one all over with butter, then sprinkle lightly with salt.
Using a paring knife, promptly cut two slits across the top of each potato to form an “X” shape. Using a clean dish towel to protect your hands, gently push both ends of the potato toward the center until the flesh of the potato pops out a bit.
Top with butter, sour cream, and chives.
For the Creamed Spinach:
Cook spinach in microwave according to package directions. Remove excess water with a colander and set aside.
In a large skillet over medium high heat, melt butter. Add onion and sauté until translucent.
Add garlic and cook for 30 seconds. Add cream cheese and cook, stirring, until melted.
Add heavy cream and cook for 2 minutes. Add mozzarella cheese, parmesan cheese, salt and pepper. Stir till combined.
Fold in spinach into cream sauce and cook for an additional minute to reheat spinach.
For the Steak:
Season steaks all over, including sides, with Milford Spice Company’s Cow Conditioner, pressing to adhere.
Set wire rack in rimmed baking sheet. Heat oil on a grill or grill pan over medium heat until piping hot. Add steaks and cook, flipping steaks every 2 minutes, until well browned and meat registers 125 degrees (for medium-rare), 10 to 13 minutes. Transfer steaks to prepared rack, tent with aluminum foil, and let rest for 5 minutes. Slice and serve.
