Cauliflower Shawarma Flatbreads with Green Tahini

These Cauliflower Shawarma Flatbreads are warm, fresh, herby, a little messy, and perfect for a meat-free dinner that still feels satisfying.

Ingredients
1 large head cauliflower, cut into florets
2 tbsp olive oil
1 tbsp honey or maple syrup
1 tbsp lemon juice
2 tsp Milford Spice Shawarma
4 flatbreads or pita breads
1 cup shredded lettuce
1 cucumber, chopped
1 tomato, chopped
Pickled onions, optional
Green Tahini Sauce
1/3 cup tahini
1/4 cup lemon juice
1/4 cup water, plus more as needed
1 small handful parsley or cilantro
1 small garlic clove
Salt to taste, optional
How to Make It
1. Season the cauliflower.
Toss cauliflower with olive oil, honey or maple syrup, lemon juice, and Milford Shawarma seasoning.
2. Roast until golden.
Spread on a sheet pan and roast at 425°F for 25–30 minutes, flipping once, until the edges are deeply golden.
3. Make the green tahini.
Blend tahini, lemon juice, water, herbs, and garlic until smooth. Add more water if needed until it drizzles easily.
4. Warm the flatbreads.
Warm flatbreads in a dry pan or oven until soft.
5. Build.
Add lettuce, cucumber, tomato, roasted cauliflower, green tahini, and pickled onions.
Serving Idea
