It is taco night, but lighter, fresher, and easier than overthinking dinner.
Best for: summer taco night, seafood dinners, quick lunches, backyard meals, and build-your-own taco boards.
Ingredients
1 1/2 lb white fish, like cod, tilapia, haddock, or mahi mahi
1 tbsp olive oil
2 tsp Milford Spice Adobo Lime
8 small tortillas
2 cups shredded cabbage
1/4 cup Greek yogurt or mayo
1 tbsp lime juice
1 avocado, mashed or sliced
1/4 cup cilantro, chopped
Pickled onions or jalapeños, optional
Lime wedges, for serving
How to Make It
1. Make the slaw first.
Mix shredded cabbage with yogurt or mayo, lime juice, and a small pinch of Adobo Lime. Let it sit while the fish cooks.
2. Season the fish.
Pat the fish dry. Rub with olive oil and Milford Adobo Lime seasoning.
3. Cook quickly.
Cook in a hot pan or on the grill for about 3–4 minutes per side, depending on thickness. The fish should flake easily.
4. Warm the tortillas.
Warm tortillas in a dry pan or directly over a flame for a few seconds until soft and lightly toasted.
5. Build the tacos.
Add fish, crunchy slaw, avocado, cilantro, pickled onions, jalapeños, and a squeeze of lime.
Quick Guacamole Shortcut
Mash one avocado with lime juice, a little chopped cilantro, and a small sprinkle of Adobo Lime. That is it. No need to make it complicated.
You can also use this Adobo Lime Guacamole as a side dip for chips, tacos, grilled chicken, or rice bowls.
